Meatless Monday Goes to School

I’ve long been a fan of Meatless Mondays — an environmental and public health initiative that helps meat-eaters take babysteps towards limiting animal products in their diets. As we know, cutting back on meat just one day a week in your house has a tremendous environmental impact. But for those of you who feel like you want to take it a step further, read this interview with mom Elizabeth Puccini (shown) who has brought the program to three public schools in New York.
