Tomorrow February 26th is National Pistachio Day. I have many ways of enjoying pistachios in recipes, but one of my favorite is this decadent dessert of membrillo (quince jam) topped with manchego cheese, cream and my beloved pistachios. I could eat this dessert anywhere and will if I’m presented with the delicious dish. Celebrate pistachio day this year with this dessert that stands out high above the rest. Enjoy!
Ingredients for Membrillo, Manchego Cheese, Cream and Pistachios:
- 1/2 – pound of membrillo (quince jam)
- 1/4 – cup manchego cheese (grated)
- 1/4 – cup whipping cream or Mexican crema
- 14 – pistachios (shelled and chopped)
