Messy Cheesy BBQ Portobello Burger
makes 4 burgers
1 1/2 cups barbecue sauce – homemade recipe here
4 portobello mushrooms – stems removed
handful of radicchio
4 round slices vidalia onions
4 wheat sesame burger buns
4 Tbsp vegan mayo
1 cup pepperjack cheese – Daiya brand
1 avocado, sliced
1. I like to grill mushrooms first, then finish them in the oven – smothered in the BBQ sauce.
2. Add cheese to each mushroom and turn oven on broil for a few minutes to melt.
3. Toast buns, swipe with vegan mayo – add onion, radicchio, avocado – and then the shrooms.
4. Slice and serve!
