Meyer Lemon-Ginger Beach Bowl Fruit Salad
vegan, makes 6 cups
1 cup chopped pineapple
1 star fruit, sliced
2 blood oranges, peeled/diced
2-3 meyer lemons, squeezed + zest
1/2 tsp freshly grated ginger
1 Asian pear, chopped
2 tbsp agave or maple syrup
optional: 2 tbsp chopped mint

Toss all ingredients and chill for at least an hour before serving.
Serve with a few pinches of more fresh citrus zest.
