On a recent trip to Dole Fresh Vegetables in Monterey, California, I kicked off breakfast with a shooter of this incredible green drink. In my experience, green drinks made at home can be bland and downright untasty. But, this mixture of ingredients is delicious, not to mention wildly healthy. There are a few unexpected ingredients that really make the difference, including a fresh lemon that hops in the mix with cucumbers and celery. This drink is best made in an industrial-strength blender, so break out your VitaMix or Blendtec’s to mix up a batch of my version of this delish drink. You’ll be glad you did.
Mimi’s Green Drink
- 1 apple, cored
- 1 stalk Celery
- 1/2 Cucumber
- 1 Lemon, peel removed
- 1 cup leafy greens (like kale or Dole fresh spinach)
Combine all ingredients in an industrial-strength blender (like Vitamix or Blendtec). Add just enough water to blend all ingredients together until a juice-like consistency results. Drink immediately and enjoy.
