Mini Donut Breakfast Muffins

Make yourself a real treat tomorrow morning with this easy breakfast muffin that tastes rather a lot like a perfect donut! Just a few simple, basic baking ingredients is all that is needed to make these beautiful muffins. They are sweet enough to eat for dessert, but dainty enough to join you at the breakfast table with a heaping bowl of fruit and, perhaps, a bit of yogurt.

 

Mini French Breakfast Muffins
2 1/4 cups flour
3/4 cups sugar
2 1/4 tsp. baking powder
1/2 teaspoon salt
1 teaspoon nutmeg
2 eggs
3/4 cups milk
7 tablespoons melted butter

For the Cinnamon-Sugar Topping
1/2 cup sugar
1 teaspoon cinnamon
4 tablespoon butter, melted

Preheat oven to 350 degrees. In a large bowl, whisk together the flour, baking powder, salt, and nutmeg.  In a small bowl whisk together the eggs, milk, and melted butter. Gently add the wet mixture to the dry, stirring until the batter is moist and evenly blended.

Spray two mini muffin pans with nonstick baking spray.  Spoon batter into prepared pans. Transfer to oven and bake for 20 minutes, or until muffins spring back to the touch.

While the muffins are cooking, prepare the topping by stirring together cinnamon and sugar in a small bowl, then place the melted butter in another small bowl.  Once the muffins are finished baking, remove from pans, then dip tops of muffins into the melted butter, then into the cinnamon and sugar. Serve immediately and enjoy.
