The other day I saw these really cute Mini-Dutch Babies online and thought how cute they looked. I love a large Dutch Baby, kind of like a huge fluffy baked pancake, so I knew I would also adore them in mini-sizes. Best of all, they can be made in a muffin tin. How brilliant is that? All you do is mix up the batter, fill up the muffin tins and put them in the oven to bake. Then, when they come out all popping hot, you spoon in a dollop of Nutella, let it melt and eat up! You could also fill them with chopped fruit and whipped cream to make a kind of strawberry shortcake, or warm maple syrup, or just about anything. For the Fourth you could even add in some whipped cream, strawberries, and blueberries for a festive touch!
Mini Dutch Babies with Nutella

1 cup whole milk
1 cup flour
1 pinch kosher salt
1 teaspoon vanilla extract
1/4 cup butter, melted and cooled
1. Preheat the oven to 400F. In a medium bowl whisk together the eggs, flour, milk, salt, and vanilla until smooth. Then slowly whisk in the melted butter until smooth.
2. Pour the batter into 20 muffin tins, filling them to about 3/4 full. Bake them for about 15 minutes, or until the side of the pancakes are puffed up and the edges are golden.
3. Remove from the oven and immediately add a spoonful of Nutella into each one. Allow it to melt and serve!
