We’ve be filling you with Cinco de Mayo recipe ideas all week. You should have a slew of recipes to choose from by now but we’re going to give you just ONE more to add to the list. These mini Mexican potatoes are not only adorable they’re a healthy option to serve up for the entire family. Made with red potatoes they’re the perfect pop in your mouth portion.
Mini Mexican Potatoes (recipe compliments of Produce for Kids)
What you’ll need:
2 medium red potatoes
½ cup guacamole
¼ cup salsa
¼ cup grated mozzarella cheese
What to do:
1. Preheat oven to 400°F.
2. Cut potatoes in half, season with olive oil, salt and pepper, and roast 15 20 minutes or until tender.
3. Scoop out ¼ of inside of each potato half. Assemble with guacamole, salsa, and mozzarella.
