Ever since I had the opportunity to visit the Sabra Headquarters last month, I crave hummus with wild abandon. Our local grocer carries more than 7 different types on hummus, all of which I’ve dutifully purchased, tasted, tested, and found to be less than desirable when stacked up against Sabra. Sometimes you’ve just gotta concede that you’ve found a favorite. For me, a scoop of original Sabra hummus is the exact right way to start off any meal, high in protein, incredibly flavorful, ready to eat the moment I decide to be hungry.
As a newbie mostly-vegan, I am always on the lookout for simple recipes that support my plant-based diet focus. And my latest go-to lunch is simple enough that I thought it worth sharing. It takes literally minutes to pull together and fills me up for an entire afternoon with all the things I really want to be putting in my body. Lots of veggies, good grains, and the marvelous goodness of high-in-protein hummus.
Here’s what’s on the plate: A slice or two of really good toasted bread, 1 single mini cucumber sliced into long pieces, baby carrots, kalamata olives, a hearty scoop of Sabra hummus, and a fresh plum for good measure.
Making this meal is so much easier than trying to pull together a salad. It’s just chop, plop, and eat. Love it!
