Happy Fourth! Like many around the US, we’re gearing up for a cookout with family and friends. On the menu we have burgers, guacamole, salads, cherry ice cream, and of course, potato salad. Potato salad has earned a reputation for being hum drum, but it doesn’t have to be! Last year I finally admitted to myself that I love the stuff and embraced potato salad, but not the kind my grandma made. My potato salad is bright, fresh, and flavorful. And there’s one secret ingredient — lemon zest! A little, or a lot, of fresh lemon zest adds kick, tang, brightness, and depth to potato salad. Throw in some fresh herbs and minced scallions, and you’ve got a dish to remember. Here’s my recipe for a fresh, modern potato salad, or just add 1 – 2 tablespoons of zest to your favorite recipe.
