With the cold weather, there’s nothing we like better than a warm bowl of soup or stew. Chili is our favorite, but usually chili is made with alot of meat. I’ve done a few vegetarian chili versions, and lentil chili is my favorite. Lentils are very nutritious and will take on the flavor of any spice you add to them. This chili is made with Indian spices. It’s topped with fresh herbs to make it really tasty and appealing to the eyes.
The easiest way for me to prepare recipes like this is in the slow cooker. I love my slow cooker, and use it often through the winter months. I’ll even be using it the whole week of our vacation when we’re in the mountains of West Virginia for our skiing trip. Bringing along my slow cooker and supplies for the week’s dinner will save us alot of money. This will be one of the meals I’ll be preparing. For the soup’s vegetables, I’ll cut them and freeze them in freezer bags, and transport them in the cooler. I’m also going to pre-measure the spices so all I have to do the morning I prepare this soup is combine the ingredients in the slow cooker.
