Non-alcoholic Cinco de Mayo Fun: Mango Lime Smoothies

Cinco de Mayo is quickly taking its place alongside St. Patrick’s Day, Independence Day, and New Year’s Eve as one of the great American drinking holidays–probably because of the excellence of Mexico’s tequila-based frozen drinks. But that doesn’t mean that those of us who are pregnant, nursing, too young to drink, or just prefer not to can’t have a little fun on Cinco de Mayo. Break out your blender, you’re making a mango lime smoothie.

Heavy on the juice and light on the yogurt, this is an easy-drinking smoothie that the whole family will enjoy. The mangoes and banana lend a little tropical sweetness while the yogurt and the lime give it a little kick. This is also a healthy treat, so you don’t have to feel bad about drinking a whole blender-full. If yours comes out a little pale (which it may, depending on your mangoes), you can add a little tumeric for color.

Mango Lime Smoothie
makes a pitcher full

2 ripe mangoes
1 banana
1 cup yogurt
1 cup apple juice
1/2 cup fresh lime juice
2 cups ice
lime slices for garnish

Combine the mango, banana, yogurt, apple and lime juices in the blender and pulse until blended. Add the ice, and pulse until it is well incorporated. Pour into serving glasses and serve with lime slices for garnish.
