Homemade granola is a totally worthy and wonderful last-minute holiday gift idea. Not only does the granola making process make your house smell insanely amazing, but it also provides your gift recipient with a delicious, easy and comforting breakfast or snack to enjoy on a few of their busy holiday days. This recipe can be made in a flash and all you have to do it scoop the finished product into gift bags, attach a few snazzy labels and boom: holiday gift giving complete. And really, have you seen how expensive some gourmet granola ca be? This gift is very posh indeed!..
Nutty Citrus Spice Granola for Gifting
vegan, makes about 6 cups
3 cups rolled oats
1/4-1/3 cup brown sugar*
1/4-1/3 cup maple syrup*
1 1/2 cups chopped nuts (any variety!) (pecans, walnuts, almonds..)
1/2 cup dried fruit (any variety!) (raisins, cranberries, blueberries..)
2 Tbsp seeds (chia, flax, sesame..)
1/2 tsp vanilla extract
1/4 cup orange juice
1/2 tsp citrus zest
1/2 tsp salt
1/4 cup oil (I like either melted virgin coconut oil or safflower oil)
1 Tbsp pumpkin pie spice
optional: 1 tangerine or satsuma mandarin, peeled/chopped up
*sweeten to taste. If you do not want an overly sweet granola, use minimal amount of sugars. If you like it sweet, use the higher end of the amount range given above.
1. Preheat oven to 300 degrees.
2. In a large mixing bowl, add all the ingredients and toss very well.
3. Line a baking sheet with foil or wax peper and spread the granola over top in a thin layer.
4. Bake at 300 degrees for about 35 minutes. Tossing the granola around every ten minutes. Let rest a few minutes to cool and crisp up before bagging.
