Oh-la-la Red Velvet Lava Cakes

What kind of lovin’ from the oven are you baking up this Valentine’s Day? Me? I’m making these simple and sweet red velvet chocolate lava cakes. They are rich and decadent and perfect for serving up to that sweetie for an extra special treat. Before you worry that you could never make something that complicated, just read these few simple steps. Making these gorgeous treats is actually a snap! Yes, you can easily make these awesome cakes at home. They look and taste so wonderful you’ll think you’re eating at a five star restaurant!

Red Velvet Lava Cakes

1 box red velvet cake mix

8 ounces dark chocolate

1/4 cup heavy cream

Confectioners’ sugar

1. Preheat the oven to 350 degrees F. Butter a 12-cup muffin tin and set aside.

2. Melt the  chocolate and cream together in a micr0wave proof bowl and stir until smooth and glossy. Set aside to cool.

3. Mix together the red velvet cake mix according to directions. Fill muffin tins 1/2 full. Use a cookie scoop to scoop one ball of ganache into the center of the cakes. Bake the cakes for 22 to 25 minutes, or until a cake tester inserted into the side comes out clean. Then allow the cakes to cool for a few minutes in the muffin tins. Invert them onto a wire rack and dust with confectioners’ sugar and serve!

  • Mix Up Ganache 2 of 8
    Ganache

    Making a rich chocolate ganache is a cinch. Place 8 ounces dark chocolate and 1/2 cup heavy cream in a microwave-safe bowl and heat until melted. Stir the chocolate and cream together until smooth. Then, chill the ganache until it is firm, this takes about 3 hours.

    Buy a box of red velvet cake mix or use a red velvet cake recipe you love. Any standard red velvet cake recipe will work great. Make sure the batter is silky smooth with no lumps in site!

    The secret to those dome-shaped cakes? Muffin tins! Spray 2 muffin tins well OR line them with cupcake liners. Fill each cup about 1/2 full. Do not go any higher or the cake will spill over!

    Scoop the ganache with a small cookie scoop into small balls. Place the balls on top of the batter but don't push them in. They'll sink on their own as they bake. Promise!

    Slip the set muffin tins in the oven and bake them for about 22 to 25 minutes, or until a cake tester inserted into the side of the cake comes out clean.

    Once the cakes have cooled for about 3 minutes in the muffin tins invert them onto white plates and give them a dusting of confectioners' sugar. It just looks so pretty!

    Now, serve up those delicious cakes as quickly as possible and enjoy them with your sweetheart. You can even try serving them with ice cream or whipped cream as well!
