One-Bite Oatmeal Creme Pies

Sometimes I want to be naughty, but just a little bit.  Enter these fun little one-bite Oatmeal Creme Pies that are snappy to make and even snappier to eat. They fit perfectly between your finger and thumb, and offer up a sweet way to indulge without feeling like you’ve been too, terribly minxy at all. Naughty, you know. But just a little bit.

One Bite Oatmeal Creme Pies
For the cookies:
1/4 cup butter
1 egg
1/3 cup brown sugar
1/2 cup quick oats
1/2 teaspoon salt
1/2 teaspoon vanilla
3/4 cup flour

For the frosting:
4 ounces cream cheese
2 cups powdered sugar
3 tablespoons cocoa powder (optional)
1/4 teaspoon vanilla

Preheat oven to 350 degrees. In a mixer, beat all cookie ingredients together just until well mixed. Roll dough into marble-sized balls and place on a parchment-lined baking sheet. Bake in preheated oven for 5-6 minutes, or just until set. Remove from oven, transfer cookies to a cooling rack.

While cookies are baking, beat all frosting ingredients together until whippy. Pipe into the center of two cooled cookies. Serve and enjoy!
