One Bowl Whole Wheat Pumpkin Chocolate Chip Bars

Pumpkin Chocolate Chip Bars

Now that fall is here I am all about pumpkin. I want to use it in just about everything I can. For desserts I’ve been making these delicious one-bowl brownie bars. They are so delicious and really take only one bowl to make. They are a lot of fun to make with my daughter too. She loves them and I don’t mind throwing one in her lunchbox now and then. Here is the favorite simple recipe that we use. It has the texture of a blondie and tastes like pumpkin chocolate chip cake of the best variety!


Pumpkin Chocolate Chip Bars

2 sticks unsalted butter

½ cup light brown sugar

¾ cup granulated sugar

1 large egg

1 tablespoon vanilla extract

1 cup pumpkin puree

1 ½ cups chocolate chips

2 cups white whole wheat flour

1 teaspoon ground cinnamon

1 teaspoon pumpkin pie spice

1 teaspoon baking soda

1 teaspoon kosher salt



1. Preheat the oven to 350 degrees F.

2. In large bowl mix together the butter, sugars, egg, vanilla, and puree until completely smooth. Then, fold in the flour, spices, baking soda, and salt.

3. Butter the bottom and sides of a 13×9 baking pan. Spread the batter into it and flatten the top with a spatula. Bake for 30 to 35 minutes, or until a cake tester comes out clean. Allow to cool completely in the pan before cutting.
