On my recent trip to Oregon I had lunch with the ladies at ‘C’ Street Bistro in Jacksonville, a tiny town of about 3000 near my parents. I ordered the Asian pulled pork sandwich that was divine and topped it off with an iced tea. When I asked for sweetener Paul Becking, the chef/owner brought out a tiny glass pitcher of simple syrup infused with orange zest. What a brilliant idea and one that I told Paul I would recreate at home and write about. 1 cup sugar
1 cup water
Zest of 1/2 orange
Bring the water and sugar to a boil. Place the orange zest in a glass bowl large enough to hold the simple syrup. Pour the simple syrup over the orange zest and allow to cool. Store in an airtight container in the refrigerator.
