Over the Top Breakfast: Milky Way Peanut Butter MuffinsKelsey Banfield
The other day I downloaded the Nigella app for our ipad and I fell in love. I’ve always loved her recipes but for some reason this one had escaped me. Man, I’ve been missing out! In honor of National Peanut Butter Day I decided to make a nice big batch and hand them out to friends. The only glitch was, I didn’t have Snickers like Nigella calls for so I used Milky Way instead. These once-in-a-long-while treat was totally worth it – we will make them again for certain!
Milky Way Peanut Butter Muffins

1 cup all-purpose flour
¾ cup granulated sugar
1 tablespoon and 2 teaspoons baking powder
1 pinch kosher salt
2/3 cup creamy peanut butter
4 tablespoons unsalted butter, melted
1 large egg
3/4 cup milk
3 Milky Way bars, chopped
1. Preheat the oven to 350F. Line a 12-cup muffin tin and set aside.
2. In a small bowl mix together the flour, sugar, baking powder and salt. Set aside.
3. Mix together the peanut butter, unsalted butter, egg, and milk until smooth. Fold in the flour mixture and stir until combined. Add in the chopped Milky Way bars fill each muffin cup ½ full. Bake for about 15 -20 minutes, or until the tops spring back when touched.
