For much of the Western world, today is Fat Tuesday. In the French Quarter, New Orleans, today is Mardi Gras. Polish tradition refers to today as Paczki Day. No matter where you are, one this is for sure, today is a day of indulgence and celebration. But, I dare admit that Paczki Day takes the concept of indulgence to the delicious extreme. Because, paczki are incredible, soft donuts, dusted heavily with sugar and filled with custards, cremes, and jellies.
For bakery owners, Packzki Day is not unlike Black Friday. They prepare for days, often hiring multiple employees to churn out their wares, preparing for an onslaught of hungry masses. Of course, you don’t have to make a run on a participating bakery to get in on the goodness of Packzki Day. The donuts are fairly easy to replicate at home.
