Panini with Prosciutto, Roasted Pepper and Basil Pesto

At our home, paninis are our new fun replacement for grilled cheese sandwiches. I’ve been making all kinds, and this is my latest creation, and so far my favorite. I simply used prosciutto and fresh sliced mozzarella. I simply added roasted red peppers from a jar and fresh basil pesto. That’s it. Just add a simple dinner salad and dinner is done.

Panini with Prosciutto, Roasted Pepper and Basil Pesto

Ingredients

sliced prosciutto
roasted red pepper slices (I used jarred)
fresh mozzarella slices
fresh basil pesto (I used this homemade recipe, but you can also use pre-made jarred)
French bread
olive oil

Method

1. Preheat panini press. Brush bread with olive oil. Spread basil pesto on bread. Then layer on prosciutto, roasted red pepper and mozzerella cheese.

2. Cook until bread is golden brown and cheese is melted.
