I’m guilty. Every summer I am guilty of buying too much fruit and can’t seem to eat, cook or preserve it all. When I found this recipe by my friend Catherine McCord of the adorable and informative website, Weelicious, I knew I found redemption. Why not make fruit leather? Kids love it and when you make it at home you know it’s healthy.
Stone fruits like peaches are plentiful this time of year but it ripens so quickly. Making fruit leather is a great way to enjoy that summer fruit before it goes to waste. According to Catherine, she has to make several batches of this a week because her kids love it so much. I can’t think of a better treat for the lunchbox or after school!
