There is something so amazing about peach season. I can’t help but go crazy adding them to just about everything. There is seriously nothing better on pancakes. Ok, well, maybe strawberries, blueberries, or just about whatever is fresh and in season, but you get the drift. The other day I had some soft peaches on hand and decided to slice them and tuck them into our pancake batter. The result where these delicious, peachy dream pancakes – the perfect taste of summer first thing in the morning!

Peach Pancakes


2 soft peaches, skinned and sliced

Maple syrup and confectioners’ sugar for serving

Whip up your favorite batch of pancake mix. Prepare your skillet to cook them and pour in your first pancakes. Immediately scatter the peach slices on top. Cook the pancake until bubbles begin to show. Flip the pancakes and cook until lightly golden brown. Serve with warm maple syrup or a dusting of confectioners’ sugar.
