We are a big ice cream house. We have it more often than we probably should (is every night more often than we probably should?) so you’d think I would be prepared when my daughter asked if she could have a sundae instead of a boring old two scoops in a bowl. I didn’t have whipped cream, I didn’t have fudge sauce, I didn’t have a maraschino cherry. What I did have was a jar of peanut butter, so I heated a spoonful in a mini cast-iron skillet (you could also microwave for 30 seconds) then drizzled it on to vanilla ice cream. Luckily I had a bar of Trader Joe’s dark chocolate, which I broke into pieces and put on top. It was a success – and since it’s a rare day that there is no peanut butter in the house, it’s nice to know I’ll always be prepared.
