Peanut Ginger Kale Rice Bowl


If you are looking for a delicious meal that you won’t mind craving – try this Peanut Ginger Kale Rice Bowl. Nutty, cheesy brown rice with a savory fluffy bite pairs perfectly with this rich, sassy, sweet peanut ginger kale salad. Kale is a super food we should all embrace this year – and if you’ve been watching, it has become quite trendy. Kale chips anyone? Serve this kale bowl chilled or warm. Make-ahead approved. Peanut Ginger Kale Rice Bowl
vegan, serves one

1 cup cooked brown rice
1 1/2 Tbsp nutritional yeast

1 1/2 cups Spicy Ginger Peanut Kale Salad

To assemble, toss the warm rice with the nutritional yeast and add to bowl. Top with chilled or warm kale salad.

If desired, add tofu or tempeh triangles to complete the dish. Try my Salt and Pepper Tofu Triangles. Or some sautéed Crispy Tempeh.
