Perfect Barley Salad

A leftover bowl of barley from last night’s dinner holds such promise. For starters it means I don’t have to steal the remaining scraps of grilled cheese crusts and baby carrots and call it lunch. I can just toss together some feta, chopped scallions, dried cherries, walnuts, and some all-purpose vinaigrette and it will sustain me for the day.
