With apples in such abundance at the farmer’s market these days I’ve been using them in just about everything. The other day I was inspired by a recent recipe on Food52 to grill up some thick apple slices and use them on top of burgers. Paired with a sharp cheddar cheese, the apple added a subtle sweetness to the burger that I loved. Grilling the apple caramelizes the sugar, intensifying the apple flavor and giving it a slightly soft, pleasing texture. Here is my new favorite method for topping burgers with grilled apples:
Method: Cook burger on grill to desired doneness. Grill apple slices separately, about 2 minutes per side to achieve good softness and taste. Add cheese slices to burger and allow to melt slightly, top with grilled apple slice. Cover grill for about 1 minute, or until cheese is fully melted. Serve on toasted buns.
