To add a nice green crunch to your Thanksgiving table how about some delicious green beans with feta? This side dish is amazingly simple and is the perfect addition to any family table. Truth be told, I make this all the time, not just for Thanksgiving. In the summer I pair the tangy feta with delicate haricot vert, and sometimes I toss it with asparagus. No matter how you do it, this delicious dish is sure to be a hit at your next feast!
Perfect Green Beans with Feta

1 pound fresh green beans, ends trimmed
1 tablespoon red wine vinegar
2 tablespoons good olive oil
1 teaspoon Dijon vinegar
1/2 cup feta, crumbled
Pinch of freshly cracked black pepper
1. Add the green beans to a pot of boiling water and cook until they are just tender enough to be speared. About 3 to 4 minutes. Drain the water and blanch the beans in a bowl of water and ice cubes, turning several times to cool down.
2. In a small bowl whisk together the vinegar, olive oil, mustard and pepper. Then add the feta and turn a few times to make sure it is fully coated.
3. Place the green beans in your serving dish and drizzle with the feta dressing. Toss the green beans lightly so they all get coated with the dressing. Serve.
