Personal-Sized Taco Pizza

My kids have eaten vegetarian for two weeks straight and they haven’t even noticed. Thanks in a large part to the magic of terms like “pizza” and “tacos.” I tell you. You can stick those terms on just about any recipe and suddenly you’ve got a meal the kids are interested in. This meal is one moms will be interested in, too. It takes just seconds to pull together, minutes to bake, and everyone in the family loves it.

Taco Pizza

  • 2 Naan breads
  • 1/2 cup salsa
  • 1 cup montery jack cheese
  • 1/4 cup black beans
  • chopped scallions and cilantro
  • 2 tablespoons sour cream
  • pinch red pepper flakes

Spread the salsa over your naan bread. Sprinkle the cheese, black beans, and half of the scallions. Bake in an oven preheated to 400 degrees for 10-14 minutes, or until the cheese is bubbly. Top with remaining scallions, chopped cilantro, and sour cream. Sprinkle red pepper flakes a top. Serve and enjoy.

    Have you ever heard of a place called “123 Samples” on the web, they give out a free samples of major brands to promote their products. I just got mine.

    I made this recipe tonight. The two changes I made…I didn’t have any naan bread so I made some homemade pizza dough:

    I also added some ground turkey, red onion, and garlic. I cooked it in a skillet with cumin and some other Mexican blend spice I had. Then I put on pizza with all the ingredients this recipe lists. Obviously this addition ceases to make it vegetarian. But I had a small amount of ground turkey left over I wanted to use.

    My substitution/addition are not necessary to this being wonderful of course!

    I love this recipe, thank you so much. I like making homemade pizza and am always looking for something unique!
