Phish has announced their summer tour dates! Devoted fans around the world have been so eager to check out the band’s lineup (check it out below) that the onslaught of traffic apparently crashed their website.
This Phish frenzy was going on at the same time I was making real UK chipperie-style fish and chips – from scratch. Coincidence? Probably.
But whether you’re a Phish or fish & chips fan (or both), you’ll appreciate the real thing – made from scratch. It took me under half an hour from start to finish using a simple whisk-together beer-batter and strips of fresh whitefish – haddock and cod are traditional, but anything goes. Just make sure the pieces aren’t too big, so that they cook through perfectly as the outside turns golden and crispy. If you’re looking for unique Oscar party food ideas, try making small strips of beer-battered fish to serve as finger food with tartar sauce for dipping. There’s nothing like freshly made fish & chips – and doing it yourself costs a fraction of take-out.
For the accompanying chips, use your favorite recipe or try oven-roasted sweet potato fries with any number of seasonings – sweet potatoes are more nutrient dense, higher in fiber and beta carotene than regular white potatoes.

Beer Battered Fish (for Fish & Chips)
1 3/4 cup all-purpose flour, divided
1 1/2 lb cod or haddock filets, skinned
1 12 oz. bottle cold beer
canola oil, for cooking
Put 1/4 cup of the flour into a shallow dish. Cut the fish filets diagonally into 1-inch wide strips.
In a medium bowl, whisk together the remaining 1 1/2 cups flour, a pinch of salt and the beer – you should have a mixture with the consistency of pancake batter.
In a shallow, heavy pot, heat a couple inches of oil until it registers 375°F.
Pat fish dry with paper towels and dredge in the flour, shaking off the excess. Coat a few pieces at a time in the batter and then into the oil. Cook, turning as needed, for 4-5 minutes, until deep golden and cooked through. Transfer to paper towels to drain and cool, then sprinkle with salt. Serves 4-6.
