Pick Your Favorite Pizza Toppings with a Pizza Bagel Bar!

Even though it’s summer, our weeknights have been seriously hectic lately. In search of easy dinner inspiration, I stumbled on an old favorite —— the pizza bagel! To add a little bit of sophisticated flavor and unique toppings to this kid-friendly standby, my oldest and I selected a few seasonal ingredients like zucchini, tomatoes, and arugula, and made up a simple pizza bagel bar. A pizza bagel bar means everyone gets to pick their favorite pizza toppings! And grown-ups are going to love having a satisfying, delicious dinner that’s ready in minutes.

    The pizza bagel is all grown-up, and makes for an easy dinner that everyone in your family will love!

    I love the sweetness that vine-ripened tomatoes bring to pizza bagels. For optimal flavor, look for the best tomatoes you can find! I finished these pizza bagels off with a few twists of fresh ground pepper, and loved the mild kick.

    Serve your pizza bagels with a couple of easy sides like sauteed green beans and a light arugula and tomato salad.

Basic Pizza Bagel Recipe
makes 8 pizza bagels

4 plain bagels, sliced in half
1/4 cup olive oil
2 cups quick and easy pizza sauce
1 pound fresh mozzarella, sliced
sea salt, fresh ground pepper, and balsamic vinegar to taste

Optional Toppings
1/4 cup sliced zucchini, sauteed in olive oil with a pinch of salt
1/2 cup cherry tomatoes, sliced
1/2 cup arugula, tossed with a pinch of salt, 1 teaspoon olive oil, and a splash of vinegar

Preheat oven to 400 degrees.

Drizzle the olive oil over the bagels. Spread about 1/4 cup of marinara on each half. Top with mozzarella and a selection of your favorite pizza toppings.

Set on a rimmed baking sheet, and bake for 10 – 12 minutes, or until cheese has melted.
