Pink Lemonade Cupcakes

When I think of Mother’s Day I think of cute desserts that kids love to make and present to their Moms. These pink lemonade bundt cupcakes struck me as adorable to look at and very easy to make. Dad can easily get in the kitchen and do this with the kids, or Mom can have a nice time making this with them. Either way, sprinkle it with confectioners sugar and pretty sprinkles to make it an adorable cake. Then run over and give your mother a big hug!

Pinkalicious Pink Lemonade Cupcakes

1 box lemon cake mix

3 ounces instant lemon pudding mix

4 eggs

1/3 cup vegetable oil

½ cup whole milk

½ cup pink lemonade concentrate

2 drops red food paste

1. Preheat the oven to 350F. Line 2 12-cup muffin tins with paper liners and set aside.

2. Mix together the cake mix, pudding mix, eggs, vegetable oil, concentrate until smooth. Fill each muffin tin until it is about 3/4 full.

3. Bake for about 20 to 25 minutes, or until a cake tester comes out clean. Allow the cupcakes the cool for 10 minutes in the pan, then turn them out onto a wire rack to cool completely.
