Pizza Baked Potatoes: Two Favorite Foods are Better than One

Everyone I know loves pizza.  Everyone I know loves potatoes.  That’s why it wasw a dagummed natural decision to combine everyone’s two favorite meals into one, blissful combination of yum.  These Pizza Baked Potatoes elevate the twice-baked potato to perfection.  And, they turn the Friday night pizza splurge into something your waistline can actually approve.  Everyone I know agrees, these pizza potatoes are gosh, darned ah-mazing.

While you can most certianly put together a batch of these using any old pepperoni, I used the mini pepperoni and heard nothing but praise from my children taste testing panelists.  Because the sauce is such a huge component to the flavor of this recipe, don’t go cheap.  Buy a can full of the really good stuff.  You’ll be glad you did.
3 large potatoes
1 can spaghetti sauce
2 cups mozzarella cheese
Microwave potatoes until tender, about 12-15 minutes. Slice the potatoes in half lengthwise, scoop a small well into the center of the potato, sprinkle lightly with salt, then scoop abit of spaghetti sauce on top of the potato. Sprinkle some cheese on top of the sauce. Place a few pepperoni on top of the cheese, then transfer to a cookie sheet. Bake in an oven preheated to 400 degrees for about 15 minutes, or until the cheese is melted and bubbly. Allow to cool slightly before serving.
