Prep a Fresh & Healthy Stir Fry with Hefty Slider BagsElizabeth Stark
Simple dinner ideas are a pretty big deal around here. So I was thrilled when I discovered a simple way to prep for a fast, healthy stir fry dinner ahead of time. I can even tailor my ingredients to the flavor preferences of each diner. What’s the secret? Hefty slider bags, of course! Here’s the scoop on a fresh, healthy, and nearly-instant stir fry.
Quick Vegetable Stir Fry
1/2 red onion, sliced
1/2 pound green beans, washed and trimmed
1 sweet pepper, seeded and sliced
1 clove garlic, smashed and minced
1 tablespoon olive oil
2 teaspoons soy sauce
1 teaspoon apple cider vinegar
ground cayenne and/or black pepper to taste
To prep ahead of time:
Wash and dry the vegetables (all but the garlic, which is best cooked up fresh).
Trim the green beans, seed the pepper, and slice the veggies. Place in a Hefty slider bag, push out excess air, and seal. Place in the refrigerator to store. Veggies should keep well for up to 4 days.
For a super fast dinner, also make rice or noodles ahead of time. Before serving, reheat rice, or quickly blanche the noodles.
To cook the stir fry:
Heat a large saute pan over high heat. Add the oil, and then the red onion. Cook for 2 minutes, add the garlic, and cook for 1 minute more. Add the remaining vegetables, and stir. Cook over high heat, stirring occasionally for 6 – 7 minutes, or until the green beans are tender and have browned lightly on the edge.
Add the vinegar and soy sauce, stir veggies as it sizzles, off the heat, and serve over pre-made rice, grain, or noodles.
