Preserved Meyer Lemons: A Touch of Brightness in Winter Dishes

Preserved Meyer lemonsA mainstay of North African cooking, preserved lemon is a great way to bring brightness and intensity of flavor to winter dishes. Using Meyer lemons instead of regular ones still gives you a powerful taste but with a little sweetness as well. You can use them in any dish where you would use lemon or lemon zest and salt to impart a more complex flavor for fish, stews and braises, soups, pasta, hummus — whatever. Elizabeth even makes a preserved lemon ice cream. It’s a fun ingredient to experiment with.
