We are eating asparagus nearly anyway we can these days. I wish the season would last all year! The other day I decided to add a twist, literally, to my favorite asparagus appetizer of prosciutto wrapped asparagus. I also wrapped a layer of breadstick dough around it and baked it until lightly browned. I loved the way the dough made a solid ring around the asparagus, it contained it so well! These fun nibbles were a hit with us and our dinner guests!
Prosciutto Wrapped Asparagus Breadsticks
1 pound asparagus, trimmed and blanched
6 slices prosciutto
1 can breadstick dough
1. Trim the asparagus and cooked it in boiling water until just tender enough to be speared with a fork. Remove it from the pot and pat dry.
2. Wrap thin slice of prosciutto around the asparagus, followed by a piece of the breadstick dough that is about 6 inches long. Twist it around the asparagus at least twice.
3. Bake the asparagus per the breadstick dough directions. Serve hot!
