I recently shared my DR PEPPER PULLED PORK SANDWICHES with you and mentioned that the pulled pork recipe is perfect for stretching into more than one meal. The second meal we like to make with the leftovers are these incredibly tasty Pulled Pork Tacos. The addition of the red cabbage and the avocado truly transform the dish, so much so you don’t even realize you’re using leftovers ; )
It makes a great next day lunch or even dinner! Serve with tortilla chips and salsa or even GUACAMOLE.
Pulled Pork Tacos
What you’ll need:
Leftover Dr. Pepper Pulled Pork
red cabbage – roughly sliced/shredded
avocado – sliced
What to do:
1. Place desired amount of pulled pork onto tortilla. Top with desired amounts of sliced/shredded cabbage and avocado slices.
2. Continue until you have desired amount of tacos.
