Crisps are such an easy summer dessert to make, I’m always surprised I don’t make them every day! This simple gluten-free, vegan strawberry crisp recipe relies on the delicious flavor of ripe summer berries and nutty coconut for a knockout dessert that takes mere minutes to put together!

Strawberry Crisp Recipe

Gluten-Free, Vegan Strawberry Coconut Crisp
makes four servings

for the strawberry filling
3 cups strawberries, washed, hulled, and sliced
1 tablespoon sugar
2 tablespoons fresh-squeezed lemon juice
1 tablespoon lemon zest

for the crisp topping
1 cup old fashioned rolled oats
1/4 cup unsweetened coconut flakes
1/4 cup coconut oil
2 tablespoons sugar
1 tablespoon lemon zest
1/2 teaspoon sea salt

Preheat oven to 350 degrees. Butter 4 ramekins and set aside.

Combine all of the strawberry filling ingredients, toss gently, and set aside.

In the bowl of your food processor, combine all of the crisp ingredients, and pulse several time until ingredients are well-combined.

Divide the strawberry mixture between the prepared ramekins. Top with several spoonfuls of the oat mixture.

Set in the oven and bake for 20 – 25 minutes or until crisp is golden and the filling is hot and bubbling.
