Quick Lunch for Spring

Now that bikini season is staring us in the face, it’s time to get serious about getting our beach bods on. Two of my biggest frustrations that keep me from losing weight this time of year are 1) healthy food feels like it takes longer to make, and 2) healthy food sometimes doesn’t seem to fill me up as much as the meat-and-potatoes approach I took throughout the winter. This beautifully simple lunch idea nips both concerns in the bud, offering a super quick sandwich that tastes great and is as filling as any hamburger-with-french-fries meal, only does it with fewer calories and significantly more nutrients.

Quick & Healthy Pita Sandwich

  • 1 pita pocket
  • 2 slices Oven-Roasted Turkey
  • 1 tablespoon lite mayonnaise
  • 1/2 tablespoon mustard
  • 1/2 teaspoon dried dill weed
  • 1 tomato
  • lettuce

Stuff a pita pocket with the turkey slices. Mix together the mayonnaise, mustard, and dill weed until a light yellow spread forms. Spread this inside your pita. Stuff the pita with salted and peppered tomatoes, and lots of lettuce. Serve with baked potato chips and enjoy!
