When I think of Rachael Ray, a few things come to mind: Rachael Ray Magazine, Rachael Ray Show as well as big smiles and fun in the kitchen. This is a true statement year round and especially during the Holidays.
Rachael is the queen of 30 minutes meals and will not fail us at the busiest time of year with meals that are quick and satisfying. For example, she shared a recipe for Caprese Lasagna on Good Morning America….
Rachel Ray’s Caprese Lasagna (Yield 4)
2 tablespoons butter
2 cloves garlic, finely chopped or grated
2 tablespoons flour
1 cup milk
1 cup chicken stock
fresh nutmeg, few gratea
Salt, to taste
ground black pepper, to taste
1 box oven-ready lasagna noodles
1 cup shredded mozzarella cheese
1/2 bunch basil, chopped
4 Roma tomatoes, thinly sliced
