Radicchio Apple Salad with Pear Vinaigrette
As the fall settles, we’ve been enjoying a host of cool weather greens like kale, chard, and spinach. But I was surprised to also see big purple heads of radicchio at the market, since I usually associate radicchio with winter. As it turns out, fall radicchio is mild and crisp, and adds lots of flavor and color to all kinds of fall salads. Here, I paired the purple stuff up with crisp Mutsu apples, Parmesan cheese, and a tangy sweet vinaigrette made with fresh pears.

I love adding a bit of seasonal fruit to just about any salad, and here, the sweetness of apples and pears plays off the mildly bitter radicchio beautifully. This versatile salad would also be wonderful with bacon, feta, seeds, or nuts.
