With winter snow storms transitioning into winter rain storms and plenty of gloomy days, it might be time to admit that I’m ready for a little bit of spring. And since I’m going to have to wait a few more weeks for sunny days and warm breezes, I thought I’d put together a little sunshine in the form of this bright and cheery seasonal salad. With sweet Cara Cara oranges, thin carrot ribbons, mild radicchio, and baby tat soi on a bed of quick-cooking bulgar, this eye-catching salad totally hit the spot and brought a little brightness to my otherwise dreary afternoon.
Adding citrus, other fruits, or grains to traditional vegetable salads is a great way to get kids to try, or even eat, a little salad.
