Rafiki, the famous mandrill from The Lion King Pride Lands, loves to eat. Specifically, he is a big fan of fruit, seeds and leaves.

This salad recipe is one that is sure to please Rafiki as well as his human friends! Filled with all kinds of healthy ingredients and topped with a blueberry dressing, you won’t be able to stop eating this tasty salad!

Rafiki’s Green Salad
Serves 4-6

  • 1 6-ounce bag of pre-washed spinach
  • 1/4 cup unsalted, roasted slivered almonds
  • 1/4 cup unsalted, roasted sunflower seeds
  • 1/2 cup unsweetened dried cherries
  • 1/2 cup olive oil
  • 1/4 cup water
  • 1 cup frozen blueberries, thawed
  • 1 tablespoon brown sugar
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon dry minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika

Add olive oil, water, blueberries, brown sugar, dry mustard, onion, salt, pepper and paprika to a blender. Blend well. Refrigerate for around 30 minutes.

Toss together spinach, almonds, sunflower seeds and dried cherries. Top with blueberry dressing and serve.
