Rainbow Carrot Salad Recipe: Colorful and Kid-Friendly!
It’s no secret that kids love color, and adding a few bold hues to the plate can be a great way to coax them into trying something new and healthy. Vibrant spring color was the inspiration behind this pretty rainbow carrot salad recipe. I picked up a few gorgeous spring carrots in a range of hues at my local farmer’s market and paired them with delicate and flavorful mâche leaves. To pull it all together, I drizzled the carrot ribbons and mâche leaves with a bright and bracing vinaigrette and a handful of nutty toasted pepitas. This result was a very tasty (and pretty) salad just right for a light lunch or a healthy dinnertime side.
