I know I’ve talked about it before, but how can I ever properly demonstrate my undying devotion to the Shamrock Shake?! This year I made a classic version and took it a little further by adding a giant dollop of vanilla whipped cream. I mean, why not add whipped cream when you are talking about a milkshake! I whipped it up fresh with a scrape of vanilla bean and added it to our awesome drink. I know there is nothing Irish about it, but I love it anyway. Some people will be raising pints of ale on Sunday… I’ll be raising my milkshake!
The Classic Shamrock Shake
3 cups good quality vanilla ice cream
1 3/4 cups 1% milk
1/2 teaspoon peppermint extract
Green food coloring, if desired
For the whipped cream
1/2 cup heavy whipping cream
2 tablespoons confectioners’ sugar
1/2 vanilla bean scraped clean
1. To make the milkshake: Blend all ingredients in a blender until completely thick and smooth. Pour into glasses.
2. To make the whipped cream: Pour the cream into a bowl with the confectioners’ sugar and vanilla bean. Use a hand blender to whip it until light and fluffy. Use a spoon to generously dollop the whipped cream on top of the shakes. Serve!
