Sometimes I can see that my daughter needs a little extra comfort, an extra hug from Mom at the end of the long day. It may be because she had a tough day at school or it may just be that she is pretty tired. But, whatever the reason, I am always here with open arms and time for a quick snuggle. On nights when I can see she is need of some extra cheer I like to serve her one of her happiest meals, Pesto Tortellini Bowl. It is incredibly simple to make – delicious cheese tortellini tossed with homemade pesto that has been thinned out with a touch of whole milk. I like to think that she likes the fresh herbs and salty tang from the cheese, but I know it is because she loves pasta in all forms and cheese tortellini is one of her favorites. This meal is always guaranteed to put a smile on her face and when I see those lips turn skyward I start to smile, too.
Pesto Tortellini Bowl
1 12 ounce package fresh cheese tortellini
2 to 3 teaspoons homemade pesto
1 teaspoon whole milk
Cook the pesto according to package directions and drain and set aside. In a small saucepan warm the pesto and stir in the milk until the creamy sauce comes together. In a large bowl toss the fresh tortellini with the warm sauce and serve right away. Top with an extra pinch of Parmesan cheese is desired.
