Real Food Fast : Shortcut Salmon Sandwich

This afternoon I am ‘recovering’ from a trip and sensing that I am a bit overwhelmed, my husband decided to fix lunch for us (he also works from home). I love when my husband gets into the kitchen because he can honestly, open the pantry and refridgerator, stare at the offerings and create a tasty meals in minutes.

Today he grabbed a can of Salmon (I do not even remember what I was going to make with it), Turkey Bacon, Celery, Onion and some fresh bread and went to work. With those ingredients he was able to create sandwich that is worthy of sharing!

Ingredients (2 servings):

1 can Salmon (drained)
1/2 stick of celery, minced
1 slice Vidalia (or any sweet0 onion), diced
1 tablespoon fresh Parsley, minced
Ground Pepper to taste
1-2 Tablespoons reduced fat Mayonnaise
2 slices of Turkey Bacon, cooked and split into 4 pieces
2 Slices of Flatout Rosemary & Olive Oil Bread (or your favorite brand)

Prepare all ingredients, place into a bowl and combine well. Create a sandwich with your favorite bread. If you have some lettuce, add it as well.
