Real Food Fast: Simple Taco-Spice-Rubbed SalmonKelsey Banfield
One of the dishes people seem to be skeptical about cooking on a weeknight is fish. There seems to be a lot of fear about overcooking or, worse, undercooking. I also get a lot of questions of how to impart flavor into fish without overpowering the meat completely. In an attempt to allay your fish-cooking fears, I thought I’d share one of my favorite, simplest ways to cook salmon. This a basic, easy fish to cook and most families like it. Plus, it is healthy! What I do is whip up this easy dried spice rub, give the fish a little massage, and pop it in the oven. It is SO easy! And, in case you were wondering, the spice rub is so similar to our favorite homemade taco spice. It really doesn’t take anything unusual from your pantry. I guarantee, if you give this simple weeknight fish recipe a try you’ll enjoy it!
Spiced Rubbed Salmon
4 salmon fillets (8 ounces each)
1/3 cup kosher salt
1/4 cup chili powder
1/4 cup paprika
2 tablespoons garlic powder
1 tablespoon cayenne pepper
1 tablespoon freshly cracked black pepper
2 tablespoons dried thyme
1. Preheat oven to 350 degrees. Mix together the dry spices in a small bowl.
2. Brush the top of the salmon with a light coating of olive oil (about 1 teaspoon per fillet) then rub each fillet with even amounts of spice.
3. Bake the salmon on a lined baking sheet for 30 to 40 minutes, or until just cooked through. Allow to cool slightly before serving.
