Reluctant Entertainer's Recipe for French Onion Soup with a Twist

This French Onion soup recipe from my friend Sandy caught my eye recently for a couple of reasons. One because French Onion soup just happens to be my husband’s absolute favorite soup. He orders it every time we eat out and I rarely make it at home (and am not sure why really). The second reason was the ‘special’ ingredient Sandy included in this classic soup recipe…apples. I’m totally intrigued by the addition of sweet, crisp apples to the caramelized onions and rich, beefy broth. And of course we can’t forget the toasted crusty bread and sharp, melted cheese topping can we?

Makes me hungry just thinking of it. I think my husband can look forward to “ordering” this at home in the near future. It might make the perfect Valentine’s Day meal now that I think of it…
