Red & Green French Toast for Christmas Breakfast!Kelsey Banfield
Are you ready for the festivities to begin? My parents are coming today and I am wrapping up everything in preparation for their arrival. One of the things I’ll be making this vacation is this tasty red and green french toast. The red is from the strawberries and the green is some fresh mint from my indoor herb pot. It is festive and fun and in the spirit of the holidays. We LOVE the pretty colors and the hint of fresh herbs. Enjoy!
Red & Green French Toast
3 large eggs
½ cup milk
¼ cup sugar
1 teaspoon vanilla extract or ¼ teaspoon eggnog flavoring
1 teaspoon cinnamon
4 slices of Challah bread (sliced 1-inch thick)
1 cup strawberries, washed and sliced
2 or 3 large mint leaves
In a large bowl whisk the eggs, milk, eggnog flavoring, cinnamon and salt. Pour the mixture into a baking dish and soak the Challah slices in it, turning it once so both sides are evenly soaked. About 8 minutes (4 minutes per side).
Warm the butter in a large skillet and melt it completely. Cook the bread for about 3 minutes per side, or until each side is golden brown.
Place the challah on a plate and layer in half of the sliced strawberries. Mash up the last strawberries and heat them in a small saucepan with the maple syrup. Drizzle the warm mixture over the French toast and dot with the mint leaves. Serve!
