My neighbor has many admirable qualities — including patience, warmth, and an amazing ability to be home during the exact stretches of time I need to drop off my girls for an emergency playdate. But she falls majorly short in one category: dessert appreciation. In eight years of knowing her, I’ve never seen the woman get excited over anything sweet. Except for, oddly, Rice Krispie Treats. So it was Abby’s idea to fashion a sheet cake out of the famous recipe for her birthday a few weeks ago. She nearly cried when she saw it. Either because she was so touched…or maybe because she disapproved of the chocolate writing scripted on top. I was thinking of recreating it for a classroom birthday soon — so much easier than cupcakes. Click to the jump to see the official off-the-box recipe.
3 tablespoons butter
1 package (10 oz., about 40) regular marshmallows OR 4 cups mini marshmallows
6 cups Rice Krispies
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
2. Add Rice Krispies. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Using the same buttered spatula scrape underneath the cake to loosen it from the pan and flip onto a serving platter. Use a squeeze tube of icing or melted chocolate to write your message.
